Vini convenzionali o vini non convenzionali.. questo è il dilemma!

[:it]Ogni winelover, anche se non addetto ai lavori, ha partecipato o assistito ad una discussione sulle metodologie produttive del vino almeno una volta nella sua “carriera di bevitore”.

Vini “naturali”, biologici, da agricoltura biodinamica sono argomenti che accendono gli animi di chi nel calice di vino ci mette il cuore. La questione è davvero delicata, poiché tocca molti aspetti alcuni dei quali ideologici oserei dire filosofici e la linea di demarcazione non è sempre facile da vedere o da intendere. Cerchiamo di fare chiarezza su alcuni punti cruciali, in modo da fornirvi gli elementi per fare luce sulla “querelle”.

Per analizzare le differenze tra le varie tipologie produttive vanno chiariti due punti fondamentali. Innanzitutto dire “vino naturale” è un OSSIMORO! Questo perché il vino non è un prodotto della natura, ma è un prodotto antropico, cioè è fatto dall’uomo! Di conseguenza è chiaro che l’accento va posto sulla modalità produttiva, quindi sarà giusto parlare di vini convenzionali e non convenzionali.

Conosciamo tutti i vini convenzionali, cioè quei vini prodotti nel rispetto delle leggi alimentari europee (sia per la coltivazione della vite che per la produzione in cantina) e che non vantano nessuna metodologia alternativa. Per produzioni alternative intendiamo la produzione biologica, la biodinamica, e la“non convenzionale/naturale”.

I vini biologici sono gli unici ad essere regolamentati da una legge Europea (Regolamento UE 203 del 2012), in cui si specificano le sostanze autorizzate in vigna ed in cantina, le aziende vinicole che producono vino biologico sono certificate da un ente privato predisposto. È giusto sapere che in vigna sono autorizzati solo l’uso di zolfo e rame (sono vietati i prodotti di sintesi), mentre in cantina è ridotto sull’uso dei solfiti. Tutte le altre pratiche (che sono davvero tante) sono legalmente autorizzate.

I vini da agricoltura biodinamica sono invece quei vini che seguono le tecniche agricole diffuse dalla filosofia di Rudolf Steiner che considera il sito agricolo come organismo vivente autosufficiente in armonia con le forze cosmiche. Non esiste nessun obbligo normativo per la coltivazione, ed anche in questo caso l’ente certificatore è privato nonché unico (DEMETER). In cantina non vi sono prescrizioni particolari per la vinificazione.

Siamo finalmente arrivati ai vini non convenzionali. Non esiste una normativa che definisce questi vini, ma sicuramente esistono regole etiche che tutti i produttori di vini “naturali” adottano: è vietato l’uso di qualsiasi tipo di prodotto sia in vigna che in cantina (solo piccole quantità di SO2); non esiste nessun ente certificatore, ma solo associazioni che si basano sulle autocertificazioni dei vignaioli che lavorano nel rispetto della natura, del territorio, delle tecniche di vinificazione naturali. La salute, la biodiversità del vigneto e l’unicità del prodotto sono i diktat di questi produttori, la loro parola d’ordine è artigianalità. Va sottolineato che spesso la categoria dei “naturali/non convenzionali” gode di una cattiva reputazione! È vero! In passato (purtroppo ancora oggi) si è spacciato un difetto del vino per una caratteristica di naturalezza! Bisogna imparare a differenziare i difetti dalle caratteristiche dell’artigianalità e del terroir; bisogna distinguere un vino dalle note olfattive caratteristiche (che non ha subito gli innumerevoli trattamenti i chimici in cantina) da un vino che si trasformato in aceto!

Les vins Pirouettes

Vitigno : Auxerrois 35%, Sylvaner 65%

La vigna è coltivata senza prodotti di sintesi, la vinificazione avviene senza aggiunta di lieviti, riposa 21 mesi sur lie e riceve solo una leggera filtrazione al momento dell’imbottigliamento

Colore: giallo paglierino intenso (sorprendente considerato l’anno della vendemmia)

Naso: presenta una leggera acidità volatile (caratteristica dei vini non convenzionalli) che svanisce presto per lasciare spazio a note erbacee ed agrumate. Grazie al territorio argillo-calcareo la componente di idrocarburi imprime il suo marchio di fabbrica.

Gusto: Sapidità e freschezza perfettamente equilibrate con la componente minerale.

Vino secco che si apre con note di pompelmo rosa ed erbe aromatiche. La persistenza e l’intensità del gusto lo rendono perfetto in abbinamento con pietanze ricche ed aromatiche.

Un vino che non delude le aspettative, la sua eleganza è la nota più sorprendente se si considera che è un vino “non convenzionale”. L’evoluzione nel bicchiere e l’innalzamento della temperatura di servizio hanno portato nel finale una nota di affumicatura molto piacevole.

Barranco Oscuro 2014   vol. 13

Vitigno : Vermentino, Viognier, Vigiriega

Vino prodotto in Andalusia; le vigne vengono coltivate a 1300m in biodinamica., la vendemmia è fatta a mano e la vinificazione delle tre uve avviene separatamente per il primo anno in botti di legno, per passare ad un affinamento dopo l’assemblaggio di un anno in acciaio. Non è aggiunta anidride solforosa.

Colore: giallo dorato

Naso: una esplosione di sentori invade l’olfatto fino a confonderlo. La prima percezione che arriva prepotente è la terra, l’humus. Poi la mela, il peperone, il cuoio bagnato, le spezie (zenzero e curry), l’erbaceo.

Gusto: una piacevole nota di freschezza prepara il palato ad accogliere tutti i sentori che si sono avuti al naso, arricchendosi e diventando sempre più intenso. La sua persistenza è lunghissima ed offre talmente tanto che toglie la parola.

Il vino del silenzio: questa è la definizione migliore! Poiché davanti un calice di questo vino si ha voglia di chiudere gli occhi ed in religioso silenzio scoprire e riconoscere tutte le sensazione gusto-olfattive che può regalarci.

Un bianco, ma con il corpo e la struttura di un rosso, un vino che si può abbinare a qualsiasi pietanza purché questa sia di grande struttura. Penso ad una paella (per restare in zona).

“Natural”, organic wine and biodynamic agriculture are topics that ignite the hearts of those who put their heart in the glass of wine. The question is really delicate, since it touches many aspects, some of which are ideological – I dare to say philosophical – and the borderline is not always easy to see or understand. We are going to try to clarify some crucial points in order to provide you with the elements to shed light on the “dispute”.

To analyze the differences between the various product types, two fundamental points must be clarified. First of all, saying “natural wine” is rhetorical. This is because wine is not a product of nature, but is an anthropic product, that is, it is made by man! Consequently, it is clear that the stress should be placed on the production method, so it will be right to talk about conventional and unconventional wines.

We know all conventional wines, that is, those wines produced in compliance with European food laws (both for the cultivation of the vine and for the production in the cellar) and that do not boast any alternative methodology.

By alternative productions, we mean organic production, biodynamic, and

“Unconventional / natural”.

Organic wines are the only ones to be regulated by a European law (EU Regulation 203 of 2012), which specifies the substances authorized in the vineyard and in the cellar, and the wineries that produce organic wine are certified by a private institution. It is right to know that only the use of sulphur and copper is allowed in the vineyard (synthetic products are prohibited), while in the cellar it is reduced on the use of sulfites. All other practices (which are very many) are legally authorized.

The wines from biodynamic agriculture are instead those wines that follow the agricultural techniques spread by the philosophy of Rudolf Steiner who considers the agricultural site as a self-sufficient living organism in harmony with cosmic forces. There is no regulatory obligation for cultivation, and even in this case the certification body is private as well as unique (DEMETER). In the cellar, there are no special requirements for winemaking.

We finally got to unconventional wines. There is no legislation defining these wines, but certainly, there are ethical rules that all “natural” wine producers adopt: the use of any type of substance is prohibited both in the vineyard and in the cellar (only small quantities of SO2); there is no certification body, but only associations that are based on the self-certifications of the winemakers who work respecting nature, the territory and natural winemaking techniques. The health, biodiversity of the vineyard and the uniqueness of the product are the diktats of these producers. Their watchword is craftsmanship. It should be stressed that the category of “natural / unconventional” wines often enjoys a bad reputation! It’s true! In the past (and unfortunately still nowadays) a defect in wine was labeled as a characteristic of naturalness! We must learn to differentiate defects from the characteristics of craftsmanship and terroir; we must distinguish a wine with characteristic olfactory notes (which have not undergone the countless chemical treatments in the cellar) from a wine that has turned into vinegar!

To complete these introductory notes, the time has come to present you with 2 “unconventional” wines that both belong to the TripleA catalog (a catalog that collects producers, farmers, artisans, artists from all over the world).

Les vins Pirouettes

Grape variety: Auxerrois 35%, Sylvaner 65%

The vineyard is grown without synthetic products, the vinification takes place without the addition of yeasts. It rests 21 months sur lie and receives only a slight filtration at the time of bottling.

Colour: intense straw yellow (surprising considering the year of the harvest).

Nose: it has a slight volatile acidity (characteristic of unconventional wines) which quickly vanishes to leave room for herbaceous and citrus notes. Thanks to the clay-limestone territory, the hydrocarbon component impresses its trademark.

Taste: Flavour and freshness perfectly balanced with the mineral component.

Dry wine that opens with notes of pink grapefruit and aromatic herbs. The persistence and intensity of the taste make it perfect in combination with rich and aromatic dishes.

A wine that does not disappoint expectations, its elegance is the most surprising note if we consider that it is an “unconventional” wine. The evolution in the glass and the rise in serving temperature led to a very pleasant smoking note in the finish.

Dark Barranco

Grape variety: Vermentino, Viognier, Vigiriega

Wine produced in Andalusia; the biodynamic vineyards are grown at 1300m. The harvest is handpicked  and the vinification of the three grapes takes place separately for the first year in wooden barrels, to pass to a refinement after assembling a year in steel. No sulphur dioxide is added.

Color: golden yellow

Nose: an explosion of scents invades the sense of smell to confuse it. The first perception that comes overbearing is the earth, humus. Then the apple, the pepper, the wet leather, the spices (ginger and curry), the herbaceous.

Taste: a pleasant note of freshness prepares the palate to welcome all the scents that have occurred on the nose, enriching itself and becoming increasingly intense. Its persistence is very long and offers so much that it takes away the word.

The best definition for this wine is The wine of silence.  Why? Because when you  holding a glass of this wine you feel like  you want to close your eyes and in religious silence discover and recognize all the taste-olfactory sensation that it can give us.

A white wine, but with the body and structure of a red one. A wine that can be combined with any dish as long as this is of great structure. A paella (to stay in the area) would make the perfect match.

The resumption of normal activities allows us, in compliance with codiv-19 safety standards, to resume tasting sessions. Les vins «naturels», bios, issus de l’agriculture biodynamique sont les sujets qui enflamment le cœur de ceux qui se passionnent à un verre de vin. La question est vraiment délicate, car elle touche de nombreux aspects, dont certains sont idéologiques, j’ose dire philosophiques, et la ligne de démarcation n’est pas toujours facile à voir ou à comprendre. Il n’y a pas de législation définissant ces vins, mais il existe certainement des règles éthiques que tous les producteurs de vins “natures” adoptent : l’utilisation de tout type de produit est interdite à la fois dans le vignoble et en cave (uniquement de petites quantités de SO2 sont autorisées); il n’y a pas d’organisme de certification (en France l’INAO envisage de réglementer les vins natures), ils existent seulement des associations qui s’appuient sur les auto-certifications des vignerons qui travaillent dans le respect de la nature, du territoire et des techniques naturelles de vinification.

La santé, la biodiversité du vignoble et l’unicité du produit sont les diktats de ces producteurs, leur mot d’ordre est le savoir-faire artisanal.

Il faut souligner que la catégorie «nature / non conventionnel» jouit souvent d’une mauvaise réputation ! C’est vrai ! Dans le passé (malheureusement encore aujourd’hui), un défaut dans le vin a été passé pour une caractéristique naturelle ! Il faut apprendre à reconnaitre les défauts des caractéristiques de la « production artisanal » et du terroir ; il faut distinguer un vin aux notes olfactives caractéristiques (qui n’ont pas subi les innombrables interventions chimiques en cave) d’un vin transformé en vinaigre !

Les vins Pirouettes

Cépage : Auxerrois 35%, Sylvaner 65%

Le vignoble est cultivé sans produits de synthèse, la vinification se fait sans adjonction de levures, il repose 21 mois sur lie et ne reçoit qu’une légère filtration au moment de la mise en bouteille.

Robe : jaune paille intense (surprenant vu l’année du millésime)

Nez : il présente une légère acidité volatile (caractéristique des vins non conventionnels) qui s’évanouit rapidement pour laisser place à des notes herbacées et d’agrumes. Grâce au terroir argilo-calcaire, le composant d’hydrocarbure laisse sa marque de fabrique.

Goût : la sapidité et la fraîcheur sont parfaitement équilibrées avec le composant minéral. C’est un vin sec qui s’ouvre sur des notes de pamplemousse rose et d’herbes aromatiques. La persistance et l’intensité du goût le font devenir parfait en combinaison avec des mets riches et aromatiques.

Un vin qui ne déçoit pas les attentes, son élégance est la note la plus surprenante si l’on considère qu’il s’agit d’un vin “non conventionnel”. L’oxygénation dans le verre et l’augmentation de la température de service ont apporté une note de fumée très agréable en finale.

Barranco Oscuro

Cépage : Vermentino, Viognier, Vigiriega

Ce vin est produit en Andalousie; les vignes sont cultivées à 1300m d’altitude en culture biodynamique, la vendange se fait à la main et la vinification des trois cépages se fait séparément (élevage en fûts de bois pour la première année) puis après l’assemblage il reste un an en cuve. Aucun dioxyde de soufre n’est ajouté.

Robe : Or jaune

Nez: une explosion d’arômes envahit l’odorat pour le confondre. La première note qui arrive dominante est la terre, l’humus. Puis la pomme, le poivre, le cuir mouillé, les épices (gingembre et curry), les herbacées.

Goût : une agréable note de fraîcheur prépare le palais à accueillir tous les arômes qui se sont présentés au nez, s’enrichissant et devenant de plus en plus intense.

Sa persistance est tellement longue qu’elle nous laisse la bouche bée.

Le vin du silence: c’est la meilleure définition! Car avec un verre de ce vin à la main vous avez envie de fermer les yeux et dans un religieux silence découvrir et reconnaître toutes les notes olfactives qu’il peut nous offrir.

C’est bien un vin blanc, mais avec la structure et le corps d’un rouge, il peut aller avec toutes sortes de préparation culinaire bien structurée (je pense à une paella…très bien faite)
