Cabernet Sauvignon: Il Cabernet “selvaggio”

Il Cabernet Sauvignon è un vitigno camaleontico capace di adattarsi a numerosi terroir, probabilmente deve il suo nome proprio all’etimologia “sauvage” (selvaggio in francese); In tutto il mondo, produce vini robusti, strutturati e tannici adatti all’invecchiamento. È certamente un vitigno di origine bordolese, dal Médoc per essere precisi. In origine chiamato “petite vidure”, il suo nome attuale appare negli scritti locali per la prima volta nel XVIII secolo. Solo agli inizi degli anni 1990 (grazie ai test del DNA) la sua origine è stata chiarita: il Cabernet Sauvignon è ufficialmente il risultato di un incrocio naturale tra Cabernet Franc e Sauvignon Blanc. L’incrocio avrebbe avuto luogo nel XVII secolo, il che contraddice le teorie secondo le quali il vitigno sarebbe stato conosciuto dai romani. La paternità è interessante per almeno due motivi:

  • L’aroma croccante del pepe verde, per esempio, è emblematico della “famiglia cabernet” e del cabernet franc in particolare. Allo stesso modo, gli aromi vegetali e persino erbacei caratteristici del sauvignon blanc si trovano in forma di tracce negli aromi primari del cabernet sauvignon.
  • Ma soprattutto, è interessante notare che la mutazione all’origine di questa varietà ha avuto luogo nel Médoc. Avrebbe potuto avvenire in un qualsiasi vigneto dove si coltivavano Cabernet Franc e Sauvignon Blanc (la Valle della Loira, per esempio), ma è avvenuta proprio lì! Nel luogo in cui il Cabernet Sauvignon rivela il meglio delle sue capacità, il MEDOC!. Così il suo terroir d’origine è anche il suo terroir d’elezione, e c’è qualcosa di profondamente affascinante in questo.

Tuttavia, questo vitigno rivela diverse sfumature aromatiche a seconda del terroir, del clima e dei vignaioli che lo lavorano, poiché è una vera e propria uva camaleontica. Ne deriva un vino sempre strutturato, tannico e destinato all’invecchiamento.

Gli aromi primari sono gli aromi che caratterizzano il vitigno: sono indipendenti dal terroir e dal clima. Per il Cabernet Sauvignon, si tratta di aromi di ciliegia, ribes rosso, cannella, pepe e talvolta di note mentolate.

Gli aromi secondari sono più il riflesso del terroir. Per quanto riguarda gli aromi terziari, sono caratteristici del metodo di vinificazione, e quindi del lavoro dell’enologo. È qui che il nostro vitigno dominante assume tutte le sfumature! Ha note affumicate nella regione di Bordeaux, rilascia note di tabacco in California, di cioccolato in Australia o di spezie in Cile.

Vediamo i due Cabernet Sauvignon italiani che abbiamo assaggiato che sorpresa ci riveleranno. Il primo è prodotto nel sud della Toscana, in Maremma (una regione con influenze marine e montane). Il secondo è un Cabernet Sauvignon della regione di Alghero in Sardegna.

Ceccante ,Cabernet Sauvignon 2017, Maremma Toscana Doc, Grillesino, 14,5°.

100% Cabernet Sauvignon, i cloni sono stati selezionati in collaborazione con l’Institut d’oenologie de Bordeaux. La produzione è limitata unicamente alle migliori annate Il vino affina in barrique per 16 mesi e seguono altri 10 mesi di affinamento in bottiglia. Questa versione è molto rispondente a quelle che sono le caratteristiche del vitigno, la qual cosa conferma la similarità del terroir toscano/bordolese…secondo la sottoscritta.  La bevuta è gradevole e interessante nell’evoluzione nel bicchiere.

Colore: Rubino intenso

Naso : frutti rossi (ciliegia), erbaceo (peperone e foglia di pomodoro), anice, tabacco.

Gusto : vino secco, caldo, ma molto equilibrato per i suoi 14,5°, questo grazie all’azione del tannino che entra subito in gioco e aiuta a smorzare la sezione alcolica. Gli aromi hanno una persistenza lunga e piacevole soprattutto sulle note erbacee ed in una nota aggiuntiva di liquirizia

Marchese Villamarina, Cabernet Sauvignon Riserva 2015, Alghero Doc, Sella e Mosca 13,5°.

100% Cabernet Sauvignon le vigne di questo vino sono allevate su terreni forti di argille ferrose, coniugate da un antico caos geologico a sabbie di natura eolica. Un terroir che influenza e plasma la varietà in chiave mediterranea rendendo il vino fine e seducente. Il vino affina in barrique per 12 mesi, rendendo il tannino molto morbido e setoso. La componente di freschezza è ben equilibrata, la nota stupefacente che lo rende completamente diverso è l’aroma di menta, in particolare si potrebbe dire perfino lo sciroppo di menta.

Colore: Rubino

Naso :  (frutti rossi (marmellata di amarene), tabacco e spezie, note balsamiche.

Gusto : secco, sufficientemente caldo, e di grandissima morbidezza. Il tannino è levigato e setoso, è un vino elegante ed equilibrato. Gli aromi non di grande intensità.

For Cabernet Sauvignon, these are aromas of cherry, red currant, cinnamon, pepper, and sometimes menthol notes.

The secondary aromas are more a reflection of the terroir. As for the tertiary aromas, they are characteristic of the winemaking method, and therefore of the oenologist’s work. This is where our dominant grape takes on all its nuances! It has smoky notes in the Bordeaux region, releases notes of tobacco in California, chocolate in Australia, or spice in Chile.

Let’s see the two Italian Cabernet Sauvignons that we have tasted, and what surprises they have revealed to us. The first is produced in southern Tuscany, in Maremma (a region with marine and mountain influences). The second is a Cabernet Sauvignon from the Alghero region of Sardinia.

Ceccante, Cabernet Sauvignon 2017, Maremma Toscana Doc, Grillesino, 14.5 °.

I’ts  made with 100% Cabernet Sauvignon, whose  clones were selected in collaboration with the Institut d’oenologie de Bordeaux. The production is limited only to the best vintages. The wine is aged in barrique for 16 months followed by another 10 months of aging in the bottle. This version is very responsive to the characteristics of the vine, which confirms the similarity of the Tuscan / Bordeaux terroir… in our opinion. The drink is pleasant and interesting in the evolution of the glass.

Color: Intense ruby ​​red
Olfactory notes: red fruits (cherry), herbaceous (pepper and tomato leaf), anise, tobacco.
Taste: dry, warm wine, but very balanced for its 14.5 °, this thanks to the action of the tannin that immediately comes into play and helps to dampen the alcoholic section. The aromas have a long and pleasant persistence especially on the herbaceous notes and in an additional note of licorice

It’s made with 100% Cabernet Sauvignon whose vines are grown on strong soils of ferrous clays, combined by ancient geological chaos with sands of aeolian nature. A terroir that influences and shapes the variety in a Mediterranean key, making the wine fine and seductive. The wine ages in barrique for 12 months, making the tannins very soft and silky. The freshness component is well balanced, the amazing note that makes it completely different is the mint aroma, in particular, one could even say the mint syrup.

Color: Ruby
Olfactory notes: (red fruits (black cherry jam), tobacco and spices, balsamic notes.
Taste: dry, warm enough, and very soft. The tannin is smooth and silky, it is an elegant and balanced wine. The aromas are not of great intensity.

Partout dans le monde, il produit des vins de garde charpentés, structurés et taniques. C’est assurément un cépage d’origine bordelaise. Du Médoc plus précisément. Après avoir porté le nom de « petite vidure », son nom actuel apparaît dans les écrits locaux pour la première fois au XVIIIème siècle. Ce n’est que dans les années 1990 et le développement des tests ADN que son origine fut clarifiée : le cabernet sauvignon est officiellement issu du croisement naturel entre le cabernet franc et le sauvignon blanc. Le croisement aurait eu lieu au XVIIème siècle, ce qui contredit les théories selon lesquelles le cépage aurait été connu des romains. La paternité est intéressante pour au moins deux raisons :

  • L’arôme croquant de poivron vert par exemple qui est emblématique de la « famille des cabernets » et du cabernet franc en particulier ; De même les arômes végétaux, voire herbacés, caractéristiques du sauvignon blanc se retrouvent sous forme de trace dans les arômes primaires du cabernet sauvignon.
  • Mais surtout Il est passionnant de constater que la mutation à l’origine de ce cépage eut lieu dans le Médoc. Elle aurait pu avoir lieu dans n’importe quel vignoble cultivant du cabernet franc et du sauvignon blanc (la vallée de la Loire par exemple). Mais elle a eu lieu, à l’endroit même où le cabernet sauvignon révèle le meilleur de ses capacités. Son terroir d’origine est donc également son terroir de prédilection, ce qui comporte quelque chose de mystique.

Ce cépage révèle cependant des nuances d’arômes différentes selon les terroirs, les climats et les viticulteurs qui le travaillent, comme on disait un cépage camaléon. Il est aussi structuré, tanique et destiné à la garde.

Les arômes primaires sont les arômes qui caractérisent le cépage : ils sont indépendants du terroir et du climat. Pour le cabernet sauvignon, il s’agit d’arômes de cerises, de groseilles, de cannelle, de poivron, et parfois de notes mentholées.

Les arômes secondaires sont davantage le reflet du terroir. Quant aux arômes tertiaires, ils sont caractéristiques de la méthode de vinification, donc du travail du vigneron. C’est là que notre cépage dominant se pare de toutes les nuances ! Il se révèle fumé dans le bordelais, libère des notes de tabac en Californie, de chocolat en Australie, ou encore d’épices au chili.

 

Voyions les deux Cabernets sauvignons italiens que nous avons dégustés quel surprise nous révèleront. Le premier est produit dans le sud de la Toscane, en Maremma (une région aux influences marines et aussi de montagne). Le deuxième est un Cabernet Sauvignon de la région d’Alghero en Sardaigne.

Le vin est élevé en barriques pendant 16 mois, puis 10 mois en bouteilles. Cette version est très correspondante aux caractéristiques du cépage.  Ce vin est agréable et intéressant pour son évolution dans le verre.

Robe: Rouge rubis intense

Nais: fruits rouges (cerise), herbacé (poivre et feuille de tomate), anisé, tabac.

Goût : vin sec, chaud, mais très équilibré pour ses 14,5°, ceci grâce à l’action du tanin qui entre immédiatement en jeu et permet d’amortir la partie alcoolique. Les arômes ont une longue et agréable persistance notamment sur les notes herbacées et une note supplémentaire de réglisse.

100% Cabernet Sauvignon les vignes de ce vin sont cultivées sur des sols forts d’argiles ferreuses, combinés par un ancien chaos géologique avec des sables de nature éolienne. Un terroir qui influence et façonne la variété dans une clé méditerranéenne rendant le vin fin et séduisant. Le vin vieillit en barrique pendant 12 mois, ce qui rend les tanins très doux et soyeux. La composante fraîcheur est bien équilibrée, la note étonnante qui le rend complètement différent est l’arôme de menthe, on pourrait même dire le sirop de menthe.

Robe: Rouge rubis

Nais: fruits rouges (confiture de cerises noires), tabac, épices et notes balsamiques.

Goût : sec, suffisamment chaud, et d’une grande douceur. Les tanins sont doux et soyeux, c’est un vin élégant et équilibré. Les arômes ne sont pas très intenses et confirment le nez, auquel on ajoute de la menthe. Ce vin se distingue par son équilibre et son élégance, et nous étonne par sa note méditerranéenne.[:]
